Yummy Balls
(Cashew Chocolate Chip Protein Balls)
I must have chocolate in my life. Take away wine, salty snacks, dairy- anything else. But I just need a little bit of chocolate. And I love any little snack that’s just ready to go. Protein balls are one of my favorite little snacks. These are gluten free and dairy free. I made these in my mini food processor, but you could even use a vitamix.
These take a few ingredients, but once you have these ingredients on hand, it’s easy to throw these together.
I started by pulsing 1/2 C cashews in my mini food processor.
Next, add the nut butter, vanilla, cinnamon, collagen peptides, honey, almond milk, arrowroot powder, and flour and mix. You can also just stir this by hand and leave out the ground cashews if you don’t have a food processor.
Feel free to taste and see if you’d like to add more honey or cinnamon. Taste testing is the fun part!
Next, scrape all of this into a bowl and add the oats and chocolate chips and mix!
The mixture should be thick and a little sticky. The next part might be fun to get kiddos involved. Grab about a tablespoon of the mixture and roll into little balls.
Store in a container in the fridge! These will satisfy your sweet tooth and are so much healthier than a high sugar dessert and will keep you full!

*1/2 C Cashews pulsed in a food processor or blender
*1/2 C Nut Butter
*1 tsp Vanilla
*1 tsp Cinnamon
*1/4 C Collagen Peptides (I love Vital Proteins - click for amazon link)
*1/4 C Honey
*Splash of almond or oat milk
*1 Tbs Arrow Root powder
*1/2 C Gluten Free flour (I love Bobs Red Mill)
*1 C Gluten free oats (Again I use Bobs Red Mill)
*1/2 C Chocolate Chips
Pulse cashews in a food processor.
Add the following ingredients, except for oats and chocolate chips. Combine in the food processor.
In a mixing bowl, combine mixture and oats and chocolate chips.
Roll into 2 inch balls and store in the fridge in air tight container. If the mixture if too sticky add more flour. Enjoy!
