whole roasted chicken
I wanted to share a recipe that LOOKS very impressive but it so easy! A whole roasted chicken. And this recipe makes your house smell so delicious! If you’ve never cooked a whole chicken before, look for the little chicken that looks like a thanksgiving turkey but is much smaller. It’s all wrapped up and bonus if you find organic or all natural. You take off the wrapping and pull out the insides and throw those away. You can be fancy and tie back the legs with cooking twine, or not. I did not- but it’s looked prettier. 3 out of my 4 kids will eat this- I just have one who only eats meat in the form of Chick-fil-a nuggets. Happy Cooking!
Recipe below!
Whole Roasted Chicken
Preheat oven to 425
Pull out giblets, rinse chicken and pat dry.
Add salt and pepper to inside of chicken
Stuff the inside with 4 lemons cut up and 3 garlic cloves- halved. Fresh herbs are delish too! Rosemary works great!
Melt two tablespoons of butter and rub all over the chicken, making sure to get under the skin.
Season with salt and whatever seasoning you like! I recommend all Beautiful Briny Sea seasonings!
Fill a roasting pan with the chicken and any veggies- I like onions, carrots, potatoes, celery, more cut up lemons.
Add a little olive oil and more seasoning to the veggies.
Roast for 1 1/2 hrs, using a meat thermometer to check that the center is at 165. Cover with foil and let sit for 20 minutes after you pull it out.
Enjoy!
