Lettuce Wraps

This recipe is reminiscent of the always popular Lettuce Wraps at PF Changs. If you didn’t grow up with the memory of waiting on those plastic feeling benches with the buzzer in your hand for your table at PF Chang’s for a special occasion or after church with friends…. then I’m so sorry you missed out. I’m sure there is still time if you live anywhere near a mall…there is usually a PF Chang’s nearby. I can almost guarantee, without googling the recipe, that these have MUCH less calories and sodium! And they are equally delicious!

Start out with chopped cooked chicken in a large bowl….then throw all the other ingredient in! My favorite type of recipe! You’ll need rice vinegar, light soy sauce, and sesame oil- but once you buy these you’ll have them on hand the next time you make this recipe….because you will want to make it again! It’s great for entertaining because it’s looks so pretty all laid out, and we usually have leftovers for lunch the next day!

Grab a can of water chestnuts, green onions, Chow Mien noodles, shaved carrots, slivered almonds, and combine it all! I just use a vegetable peeler to peel one or two large carrots and use the carrot slivers. They are the perfect size that way! Peanut sauce just MAKES this recipe so don’t skip that ingredient!

In case you didn’t know, because I didn’t, chop the white ends of the green onion and a little of the green. Then peel those carrots!

Then stir it all up! You can play around with this recipe as well- just add as much as you want of the veggies and toppings! I like to buy either iceberg lettuce, if you really want to be like PF Chang’s, or the long pieces of romain. Wash the lettuce and let it dry. I love to add a side of cauliflower rice or regular rice with this dish as well! Combine the chicken, oils, soy sauce, peanut sauce, carrots, almonds, green onion, chopped water chestnuts and add some chow mien noodles. Taste the mixture at this point to see if you want to add more soy sauce or add some peanut sauce. I like to reheat the mixture at the very end to serve it hot! Then just spoon it onto your lettuce and drizzle with some more peanut sauce, add a few more chow main noodles and roll it up!

Lettuce Wraps

*2 Cups Chopped Cooked Chicken

*3 Tbs Rice Vinegar

*3 Tbs Light Soy Sauce

*2 tsp Sesame Oil

*1/2 C Chopped Water Chestnuts

*1/4 C Chopped Green Onion

*1/2 C Chow Mein Noodles

*1/4 C Slivered Almonds

*1 C Shredded Carrots or Peeled Carrots

Head of Romain lettuce or Package of Romain

Jar of Peanut Sauce

Love to serve a side of cauliflower rice or regular rice with this as well!

Start with chopped, cooked chicken.

Combine all ingredients in a large bowl.

Heat the mixture up again before serving.

Spoon the mixture into a piece of lettuce then, drizzle the wraps with peanut sauce, some more Chow Mien noodles, then wrap it up and enjoy!!!

*You can also use ground turkey or chicken for this recipe- ground turkey pictured below!
