Bison Bowls

I love using Bison!I also LOVE bowls of goodness! It’s just so easy to throw everything together. I buy most of my meat from Costco and they have a great two pack of Bison. But why Bison instead of Beef?

Bison is a leaner red meat and it tastes delicious! Look for grass fed for the healthiest cut. It has a slightly sweeter taste to me too.

Bison burgers are delicious as well. But the easiest way to feed the whole family is just to brown the meat in an iron skillet. I remember my mom teaching me how to brown meat, and I got my oldest son involved in this meal. He learned how to stir it and let it cook until all of it is browned. I think kids just enjoy food that they helped to make! This recipe can be changed easily too. Use whatever veggies you have on hand. In a separate skillet, I sautéed bell pepper and vidalia onion (the BEST onion) in ghee.

After the veggies and meat are done- chop your toppings for the bowl! I used raw zucchini, tomatoes, spinach, avocado, cheese- but you could use anything!

Either drain the fat from the meat in a strainer, or use a straining spoon to let the fat drip out before you serve it. Then pile it on! I also love a fun mango salsa on top! Get creative and use whatever veggies you have! I’ll show you how my kids ate this- some wanted plain meat, one wanted meat with cheese, and one wanted his with cheese and plain greek yogurt in a burrito. And one refuses to eat meat ha! I love having cooked meat on hand for leftovers too!

Bison Bowls

*2 pounds ground cooked bison

*sea salt or seasoning of choice

*2 bell peppers

*2 tomatoes

*1 large onion (Visalia if you can find it!)

*1 cucumber chopped

*1 raw zucchini chopped

*2 avocados

*Spinach

*Cheese

*Salsa

*Tortilla chips optional

Brown Bison meat in a skillet until cooked.

In a separate skillet sauté peppers and onion in 2 tsp of ghee.

Season meat with sea salt or seasoning of choice.

Chop all the veggies used for topping.

PILE IT ON!

Top with cheese, salsa, and tortilla chips!
