It’ll Heal You Soup
Chicken and Veggie Soup with Lemon, Ginger & Turmeric
You know when you are sick and nothing sounds good but soup?? Well that was me for the last few weeks. I got bronchitis, and it was awful and I would walk into the kitchen, look around, and walk back out. It was almost like when you’re pregnant, and hungry, but nothing sounds good!
I just wanted soup. My sweet neighbor made me bone broth soup but I finished that- and then decided to create a soup that also had lemon, ginger, and turmeric. Those are the TRIFECTA for healing!
Ginger extract has been used to help prevent the development of bacteria in the respiratory system, lessening the risk of lung problems like bronchitis.
Turmeric Boosts the immune system, and lemon helps with respiratory problems- and those are just the beginning of the health benifts! A quick google search will convince you to try these three things when you’re sick (Or well to just maintain good health!!).
I started with Bone broth. But not just any bone Broth. Kettle and Fire Ginger Lemon Turmeric Bone Broth. It’s so good!
Bone Broth is another incredibly healing food! It’s rich in collagen (think healthy hair, nails and joints!), boosts your immune system to help you get better faster, it’s anti-inflammatory and easy for our bodies to digest and absorb. Make sure to get an organic bone broth! I used two boxes of this Kettle and Fire flavor and one box of regular Costco organic bone broth.
First grab all of your veggie and start chopping. I used Carrots, little potatoes, celery, plus fresh garlic, ginger, and lemon.
I heated a large pot with olive oil, then added fresh garlic and let that simmer. Then I added all of the chopped veggies and some diced fresh ginger, and let that just cook for a while. I added some fresh cilantro just because I had some in the fridge- but you could add any fresh herbs. It smells SO good while it’s cooking!
After the veggies soften, you just pour in all the Bone Broth. Then squeeze 2 lemons. That’s it! I let it come to boil then just simmer for a few hours. You don’t have to let it simmer that long but I had time!
At the very end I added the meat from a rotisserie chicken, let it come back to a boil, then turned it down and served it up!
The soup was actually even better the next day as all the flavors mixed together! Soup truly is a healing, comforting dish when you aren’t feeling well. I was even able to share some with a neighbor who was just having a hard week. This has saved me this week and I hope you find the same healing and comfort from this soup the next time you aren’t feeling well, or just need some comfort food!!

Chicken and Veggie Soup with Lemon, Ginger, and Turmeric
*2 Boxes of Kettle and Fire Turmeric Ginger Bone Broth
*1 Box Regular Bone Broth
*The meat from 1 rotisserie chicken
*2 Tablespoons olive oil
*4 Garlic Cloves diced
*4-5 Large Carrots
*4 Large Celery Stalks
*8-10 Small Potatoes (I used the multi color ones!)
*2 tablespoons diced fresh ginger
*Juice from 2 lemons
*Any Fresh herbs you have- I used cilantro
Chop the veggies, garlic and ginger. Heat a large pot and add olive oil. Add Garlic and let it simmer for a few minutes, stirring so it doesn’t burn.
Add all of the veggies and ginger. Stir and cook for about 20 minutes until the veggies start to soften.
Add the chicken.
Pour in all of the broth, and squeeze the lemon juice into the soup. Bring to a boil.
Turn the heat down, cover, and let it simmer for at least 20 minutes. If you have time, make this soup early in the day and let it simmer for several hours. Enjoy! And if you aren’t feeling well- I hope this soup helps you as much as it helped me this week!
