Fancy Quesadillas

To be honest, I didn’t grow up eating Mexican cuisine. I realized in college that this was weird as most people told me about family Mexican night, or their favorite neighborhood Mexican place. I learned to love it at Auburn because we went all the time…because it’s cheap! But our kids aren’t really into Mexican food either, which is horrible because “Taco Night” is the universal language of American dinner. And it’s easy. And it feeds a crowd. And it’s just normal. But, Daniel, Phoenix, and I love these quesadillas. And all those other kids at our house are missing out.

These are pretty easy to make and they look fancy, so they’re fun to make when you’re having friends over too!

All you need are these ingredients: (plus shredded cheese and guacamole - I left those out of the pic haha)

I usually grab a rotisserie chicken just to make this recipe easier, but any type of chopped cooked chicken is fine. Then you need onion, garlic, spray avocado oil, a can of black beans, a can of rotel tomatoes, shredded cheese, and tortillas (salsa and guac for topping).

Chop onion and garlic, and saute in a little olive oil, butter, or spray avocado oil, This makes your house smell delicious and people will think you are a professional chef!

Next, dump the can of rotel and the can of beans in a strainer, and rinse with water. This just rinses everything from the juices in the can, so you just have the tomatoes and beans. Then let the mixture sit so all the water drains out. I like to give it a little shake and it helps drain faster.

Next, add the tomatoes and beans to the sautéed onions and garlic. Then add the chicken and stir all together. This mixture is pure magic. If you have any leftover- just save it in the fridge and add it to salads, or eggs, or just a scoop for lunch!

Next comes the fun part. Line a baking sheet with foil, then add some of the chicken mixture to half of a tortilla, top with shredded cheese, then fold it over. Line these folded tortillas on the baking sheet in a row. Kids love to help with this part! Last, spray the folded tortillas with spray avocado oil to help them get toasty while baking. Then pop them in the oven. When they are a little browned on the top and the cheese is melted, they are done! Then cut them into three triangles with kitchen scissors! Top with salsa and guacamole and gobble them up!

Fancy Quesadillas

*2 Cups chopped cooked Chicken

*Package of flour tortillas (I like the carb balance kind to help even that carb/protein ratio)

*2 fresh garlic cloves crushed

*1/3 C chopped onion

*Olive oil/spray avocado oil

*1 can rotel tomatoes

*1 can black beans

*shredded cheese

*guacamole and salsa for topping

Recipe

*Preheat oven to 350

*Spray a saute pan with avocado oil, or drizzle some olive oil. Saute onion and garlic until onion is soft.

*Rinse the beans and rotel tomatoes in a colander. Let the colander sit in the sink to drain water. Shake it a little to drain quicker.

*Add the beans and tomatoes to the onions. Then add chicken. Stir over low heat until combined and heated through.

*Line a baking sheet with foil. Then add the chicken mixture to half of a tortilla, top with shredded cheese. Then fold the tortilla over the mixture.

*Fill the baking sheet with the folded tortillas. Spray the tops of the folded tortillas with spray avocado oil.

*Bake for about 10 minutes, or until the tops are slightly browned and the cheese is melted. Cut into three triangles with kitchen scissors. Top with salsa and guacamole.
