Butternut Squash Soup
I love soup in the Winter! Especially soup you can make in the BLENDER! The chopping takes a little time, but just turn on some fun music, pour a glass of red, and chop away! Then it’s literally just roasting the veggies, and pouring it all in the blender and done!
Start by peeling a large butternut squash with a vegetable peeler. Then chop two apples and an onion.
Preheat ove to 425, combine all the chopped goodness on a baking sheet, and drizzle with olive oil, or spray with avocado oil! I love to spray my veggies when roasting, it keeps the oil a little lighter than just dumping it on there.
Season with salt and pepper and cinnamon. Roast on 425 for 20 minutes, stir, then roast for another 15-20 minutes, or until soft. Next, throw it all in a high powered blender, add almond mild and chicken broth, and blend! The blender actually heats while it blends- and DONE!
I usually add a protein to add to the soup to balance out a complete meal. Typically I do chicken sausage, but we tried some chicken meatballs from Costco- and they were fabulous! the cranberry in the meatballs paired perfectly with the butternut squash soup, and it tasted very Thanksgivingy!! I cooked the meatballs in a skillet, then just added to them to the bowl of soup! I topped with a little greek yogurt- some toasted nuts would have been great too!
Butternut Squash Soup
*1 Large Butternut Squash
*2 Large Apples- I used honeycrisp
*1 Onion
*Avoado oil spray or olive oil
salt and pepper and cinnamon
*1/4 C milk - I used almond milk
*1 C Chicken Broth
*Preheat oven to 425.
*Protein of choice, I love chicken sausage or these chicken meat balls!
-Peel the skin off the butternut squash with a veggie peeler. Then chop the squash, apples, and onion into 2 inch cubes.
-Combine everything on a baking sheet. Spray with avocado oil spray or drizzle with olive oil, sprinkle with salt, pepper, and cinnamon then toss to coat.
-Roast for 20 Minutes, stir, then roast for another 15-20 minutes or until soft.
*Transfer the veggies to a high powered blender, I love the Vitamix, then add the milk and chicken broth. Blend oh high, then low speed for a about a minute. The soup will heat as it blends.
*Heat chicken sausage or chicken meatballs, or protein of choice in a skillet. Add it to the bowls after the soup is served. Top with plain greek yogurt! Enjoy!
