Easiest Chicken Tortilla Soup

We have (probably) the last spring cold front coming in this weekend! I know some people even have snow! So I feel justified in posting a soup recipe in April! Also, I love any easy recipe that is freaking delicious! And Easy! Also this JUST has 7 ingredients….7!

This is a fabulous recipe to make for entertaining because you can double or triple this recipe easily! And this one is ALL about the TOPPINGS! You can go wild with a toppings bar filled with all different things to add to your bowl! And people will be very impressed…but really it just has 7 ingredients!

I love having this for leftovers too! I get so excited to eat this for lunch the next day because the flavors are even yummier after sitting overnight.

Start by chopping a smallish onion and a few garlic cloves, heat some olive oil in a soup pot, and sauté the onion and garlic. Add a can of diced green chiles. This will make your house smell like you are a gourmet chef!

When the onion starts to soften, add a can of salsa, diced chicken from a rotisserie chicken, and chicken broth. Boom. That’s it! Let that come to a boil, then turn the heat down and let it all simmer for 20 minutes. Throw in some bay leaves if you want- just to be fancy. Just remember to get them out before you serve!

Now I will share with you the secret to all things broth. It’s called Better than Bouillon- because it is SO much better than just your grandma’s bullion cubes! Or even store bought chicken broth.

It comes in a little jar, and all you do is heat water in a measuring cup, and add 1 tsp per Cup of chicken broth, and stir. The flavor is amazing! You can find this in most grocery stores, and you can buy a large jar at Costco! They have all kinds- beef broth, even Vegetarian options that taste like chicken or beef broth! Now for my favorite part- the toppings! This is what MAKES the soup!

I love to use diced avocado or guacamole

squeeze of lime

shredded cheese

cilantro

plain greek yogurt (because sour cream is gross to me)

Tortilla chips

In my opinion, you must use all of these to really experience this soup! But be creative- add whatever you want!

Easiest Chicken Tortilla Soup

*1/2 C onion Chopped

*1 Tbs minced garlic

*4 ounce can of diced mild green chiles

*2 Tbs olive oil

*30 ounces of chicken broth

*1 16 ounce jar of salsa

*2 C chopped cooked chicken (Just buy a rotisserie chicken!)

(Optional 2 bay leaves)


Cook onion, garlic, and chiles in oil over medium heat until tender.

Add chicken broth, salsa, chicken and bay leaf.

Bring to a boil, then turn heat down and let simmer for 20 minutes.

Remove bay leaves.

Serve with all the fun toppings!

Avocado, wedge of lime squeezed, shredded cheese, cilantro, plain greek yogurt, tortilla chips!
