Cauliflower Rice Bowls
When I first started eating a mostly Paleo diet, (meaning no grains, gluten, diary) rice was not on the approved list. This was almost 10 years ago and there were no gluten free all purpose flours or already riced cauliflower. I can’t tell you how much time it takes to rice cauliflower by hand and make sure the liquid is out, or make a cauliflower pizza crus, or find the right mixture of paleo flours for bakingt. Ah how time has changed healthy eating! Thankfully now there are so many ready made options for paleo or just cleaner eating! If you are staying away from rice for the carb content or just trying to add more veggies in to your diet- be thankful for frozen riced cauliflower! I don’t eat strictly paleo anymore, but I try to eat food from the ground, not processed, and add as many veggie as I can with lean proteins and healthy carbs.
This dish is a bowl full of veggies and protein with a little fat- the perfect combo!
Start out chopping three bell peppers and two zucchini. I always cook more veggies than I need so that I can have leftovers for lunch!
Heat some olive oil in a skillet on medium heat and add two crushed garlic cloves. Cook and stir the garlic- which will make your whole kitchen smell like you are a professional chef!
I also sprinkle some salt in the skillet while I cook the garlic. Garlic burns quickly so only cook for a minute or two then add the sliced bell peppers.
Add your favorite seasoning and cook and stir. When the peppers soften a little add the chopped zucchini and chopped cooked chicken! We grilled chicken on the Green Egg the night before, so I chopped that up! You could also use rotisserie chicken!
For the Cauliflower Rice- I used two bags of frozen riced cauliflower from Sprouts so that I could have leftovers. Heat a little butter in a separate skillet, and add the frozen rice.
Let’s be honest. Cauliflower rice tastes….like cauliflower. So for some flavor, I added two teaspoons of Better Than Bouillon. I keep this in the fridge to make chicken broth quickly, but it can be used to add amazing flavor as well! Goodbye bouillon cubes!
Cook and stir the rice, adding a little water if you need more liquid. Now it’s time to make guacamole! (Or buy the prepared guacamole cups to save time). Costco has really fresh avocados! I just mash two avocados and add a little salt and lemon juice! Cilantro is delicious to add as well!
Now it’s time to layer it all in a delicious bowl!!! Cauliflower rice, veggies and chicken mixture, guacamole, cheese, tortilla or sweet potato chips and salsa!
So good!
I like to mix the bowl all together and use the chips as a scoop! It’s so good!
Cauliflower Rice Bowls
*2 crushed garlic cloves
*2 Tbs olive oil
*3 bell peppers
*2 zucchini
*2-3 cups chopped cooked chicken
*2 bags frozen riced cauliflower
*1 Tbs butter
*better than bouillon
*2 ripe avocados, lemon juice
*salsa
*cheese
*tortilla or sweet potato chips
*Chop bell peppers. Heat olive oil in skillet, and stir and cook garlic in oil for 2 minutes. Add peppers and cook until a little soft.
*Add Zucchini and cooked chicken and stir until mixture is hot. Season with whatever seasoning you like!
*Prepare the “rice”. Heat butter in a separate skillet. Add the frozen riced cauliflower. Add 2 teaspoons of the better than bouillon and a little water if you need more liquid. Add salt and pepper and stir until heated through.
*Prepare guacamole. (or buy the already made guacamole packets to save time). Peel and mash two ripe avocados, add salt and lemon juice and stir! Cilantro is a great addition too!
*Time to Pile In a bowl! Pile the rice, veggies and chicken, cheese, salsa, guacamole and top with tortilla or sweet potato chips!
