I love pasta, but my stomach does not! The carbs and sauces that usually go together in a pasta dish just don’t sit well with me. But, hallelujah, there is a vegetable that acts and looks JUST like pasta- the spaghetti squash! This is a true comfort dish! It’s warm and cheesy and amazing!

Grab your sharpest knife, and cut that sucker down the middle on the long side. Drizzle some olive oil and sea salt and whatever seasonings you like. I love Beautiful Briny Sea!

Place the squash face down in a baking dish, and cook on 425 for about 30-50 minutes, depending on the squash size. A medium sized squash usually takes 45 minutes. You’ll know it’s done when you can use a fork to pull out the pasta looking middle. When it’s done, scoop out the seeds and toss.

While the spaghetti squash bakes, start the other part of this delicious dish! You can adjust the veggies to what you have on hand or what you like! I used three bell peppers, two zucchini, and spinach. I love to throw spinach in everything to get more greens! I used an Italian chicken sausage I found at sprouts- so good!

Heat 2 tablespoon of butter in an iron skillet. Add 2 chopped or crushed garlic cloves and cook and stir for about a minute. There is nothing like the smell of garlic and butter! Add the chopped peppers and cook and stir for about 5 minutes, then add the chicken sausage. Cook and stir, adding zucchini last (it cooks much quicker).

It’s so pretty and colorful- we should all try to eat the rainbow! There are so many delicious and beautiful veggies! Next, scoop out the “pasta” from the spaghetti squash with a fork and add it to the skillet. Then add a huge handful of spinach, it cooks down! Stir it all together until the spinach is soft.

Next is the cheeeeese! I love cheese. Feta or Permesan would be delicious as well, but I used freshly grated white cheddar.

Let all the cheesy goodness melt and you’re ready do dig in! Add any other seasonings you want. Some simple fresh pepper and sea salt is perfect!

“Almost Pasta” Deliciousness

*Medium Spaghetti Squash

*1 Tbs olive oil

*2 Tbs butter

*2 Garlic Cloves chopped or crushed

*I package Italian chicken sausage

*3 Bell Peppers

*2 Zuchinni

*Large handful of spinach

*1/2 C Feta or freshly grated white cheddar (parmesan would be dlish too)

Preheat oven to 425.

-Cut spaghetti squash in half lengthwise. Drizzle the squash with olive oil, sea salt, and any spices you like. Place in baking dish cut side down. Cook for about 30-50 minutes until “pasta” squash comes out easily with a fork,

-While squash cooks, chop veggies and chicken sausage.

-Heat butter in an iron skillet, add garlic and cook and stir for about a minute.

-Add bell pepper to skillet and cook and stir for 5 minutes.

-Add chicken sausage and cook and stir.

-Add zucchini last. Cook and stir until zucchini softens a bit.

-Add spinach and stir until spinach wilts.

-Sprinkle cheese over the top and let it melt.
