butternut squash soup
This soup is SO delicious and easy to make if you have a high powered blender, like a vitamix.
Start by peeling and chopping a butternut squash. Or to make it really simple, buy the already diced version.
I use a peeler to get the skin off, then cut the squash in half, and I cut around the seeds.
Then add the squash and 1 or two chopped apples to a pan. Drizzle with olive oil, sea salt, and cinnamon. Roast on 425 for about 45 minutes or until soft.
Then put the veggies in the blender! Add 1 Cup chicken broth and 1.4 cup almond milk.
The vitamix will actually heat the soup while it blends! Pour into bowls and top with cooked chicken sausage or bacon! Delish!
Recipe:
1 large Butternut Squash
2 apples (we love honey crisp)
*Peel and chop squash. I leave the peel on the apples and chop those and add both to a pan.
*Drizzle with olive oil, sea salt, and cinnamon
*Roast on 425 for about 45 minutes, or until soft.
*Add veggies, 1 C chicken broth and 1/4 C almond milk to blender.
(Add more liquid for a thinner soup)
*Blend!!
*Serve soup topped with chicken sausage or bacon!
