Stuffed Sweet Potatoes

I know its hard for me to get enough veggies in most days. This recipe is easy to change based on what veggies you have on hand, and its a tasty way to eat those veggies!

First I cooked some bacon. I had zucchini, bell pepper, and onion in the fridge so I chopped all of these. Then I sautéed them together in some leftover bacon grease, because why would you waste bacon grease!

Meanwhile I cooked two sweet potatoes in the oven on 425 for about 45 minutes. The microwave works well too and is much faster. As the veggies cooked there was some liquid that I didn’t want in the iron skillet, so I drained the liquid a few times using the top and pouring the liquid in the sink. When the veggie mixture softened, I added feta cheese and crumbled the cooked bacon-because cheese and bacon makes life better!

After the sweet potatoes were done, I just cut them in half and added a little salt…

And then top the sweet potato with all that yummy veggie deliciousness!!! Again, you can use other veggies as well as substitute white potatoes! So delicious and you won’t feel like you’re eating a big serving of veggies!

Recipe

*2-4 Sweet potatoes- roasted on 425 for about 40 minutes until soft (or microwave for about 5 minutes)

*Cook bacon and crumble once cooked

*Chop veggies- I used two bell pepper, one onion, and one zucchini but you can substitute any veggie you have on hand.

*Saute veggies in some leftover bacon grease. When soft, top with feta cheese and the crumbled bacon.

*When done, cut sweet potatoes in half and sprinkle a little salt. Top with the veggie mixture and add avocado on the very top!
