White Bean Chicken Chili

It’s FALL! Time for all the soup recipes to come out of hiding!

I love hearty soups and I love easy recipes- and this one is BOTH!

It only has a few ingredients and is very simple to make! The toppings make this yummy bowl complete!

Start out by heating up a few tablesoons of olive oil, then add 1/3 cup chopped onion, and a can of chopped green chilis. Cook and stir until onions are softened.

After the onions are soft, add a little flour and stir until it all blends. Next- just add chicken broth, two cans of Navy beans undrained, and chopped cooked chicken (I always use a rotisserie chicken). SO EASY! Let it boil, then turn down and simmer for about 20 minutes. BOOM and done.

My favorite chicken broth is Better Than Bouillon! All you do is heat up some water in the microwave, then mix in the better than bouillon! It tastes delicious and is just a richer flavor than most chicken broth!

This is the perfect recipe to double or triple if you’re having people over to watch football! The toppings are fun to set out and it looks much fancier than it is! And the leftovers are even better the second day!

White Bean Chicken Chili

*2 tbs olive oil

*1/3 C chopped onion

*1 can chopped green chilis

*1/3 C flour

*1 tsp salt

*1/2 tsp black pepper

*2 tsp cumin

*2 tsp Campfire seasoning optional (from Beautiful Briny Sea Seasonings)

*2 C chicken broth (I love Better Than Bouillon!)

*2 can Navy Beans undrained

*2 C chopped cooked chicken (I love to use a rotisserie chicken)

Toppings options: shredded cheese, plain greek yogurt, salsa, avocado, cilantro chips

-Heat olive oil in a large pan or dutch oven, add onions and green chilis and cook and stir until onions are soft.

-Add flour, salt, pepper, and cumin, and cook and stir until mixed together.

-Slowly add chicken broth and stir until mixed well.

-Add undrained beans and chicken.

-Bring to a boil, then turn down heat and simmer, covered, for 20 minutes.

-Done! Add all the fun toppings and enjoy!
