Skillet Sweet Potatoes

I love sweet potatoes! This recipe can be made with white potatoes as well, but sweet potatoes have my heart! These skillet potatoes are a perfect side with with grilled chicken or burgers or toss them in a salad!

We all need carbs in our diet. Don’t be afraid of carbs. A good rule of thumb is to stay around 30 grams of carbs every time you eat (depending on your activity level). After a run or a heavy weight lifting workout- make sure you’re eating healthy carbs! If you get that light headed feeling after workouts, you are probably not getting enough carbs. And sweet potatoes are a wonderful, made from the earth, carbohydrate.

SO- I first get all the skin off with a peeler. Then I chop into small squares.

Next, heat an iron skillet on medium heat and add 3 tablespoons of olive oil, ghee, or coconut oil. Let the oil heat for a few minutes then add the potatoes. A regular skillet will work as well, but the iron skillet just makes them tastier in my opinion.

Season with whatever seasonings you like! I love to just use sea salt and cinnamon.

Cook and stir, then cover to let the potatoes soften while they cook. I personally love the crispy edges so I let mine cook for a while- stirring OFTEN. You will have to add more oil a few times while they are cooking, especially with an iron skillet. If the potatoes start to stick, just add a little more oil and keep stirring.

Cover, cook, and stir for about 30 minutes, or until they soften and start to crisp on the edges!

Skillet Potatoes

*3 Tablespoons olive oil, ghee, or coconut oil (You’ll need more as they cook)

*3 Medium size sweet potatoes

*Sea salt and cinnamon (or you’re favorite seasoning)

-Using a peeler, remove the skin from the sweet potatoes.

-Chop the potatoes into small cubes

-Heat oil in an iron skillet over medium heat for a few minutes.

-Add potatoes to the skillet and season with salt and cinnamon.

-Cover potatoes and continue to stir often. If they start to stick, add more oil.

-Cook and Stir until potatoes are soft and edges are crispy.
